Just about everyone loves tamales.
Great cooking is about more than recipes—it's about techniques.
By the end of the class, you will know how to make masa, flavorful tamale dough and be able to fill and fold tamales, as well as know how to make ahead and freeze them.
Tamale making parties (or “Tamaladas”) are holiday traditions for many families with Mexican heritage. While the process can be time consuming, it’s not difficult once you’ve had an expert (Mayra my Mexican Amiga) walk you through it step by step.
We’ll have three fillings prepared, braised Pork, Green Chile & Cheese and Chicken (you will go home with recipes), and then as a class you’ll prepare your fresh Masa-based tamale dough. As you would at Christmas, you’ll gather together to assemble tamales, wrapping them in classic corn husks for steaming. While your tamales are cooking, you will prepare some salsa to go with your tamales. You’ll leave not only with killer tamale-making skills and some killer tamales, but also a better understanding of the cultural significance of the Tamalada.
You will be making 36 tamales – 12 each of the pork, chile & cheese and chicken.
Class fee: $70.00 per student. You must prepaid for class 48 hours before hand.

Please bring a container or plastic bags with you to take your tamales and salsa home. Tamale and salsa making will run about 2 – 2 ½ hours. You can take home your tamales to be steamed or Mayra will steam them for you. This process takes about 2 hours.
